Vegan Breakfast Hash

Ingredients

  • 1 sweet potato, diced into small cubes
  • 1 potato, diced into small cubes
  • 1 onion, peeled and finely diced
  • 1 red pepper, finely diced
  • 2 tsp Cajun seasoning
  • Handful of kale
  • 1 lime
  • 1 avocado, sliced
  • Salt and pepper
  • Spicy vegan mayo, to serve

    Preheat the BBQ for 2-3 minutes on a low heat with the Chef or Paella Pan in place. Fry the potatoes in a little oil for a few minutes, then add the onion and peppers, cook for 5-6 minutes while the veg softens. Season well and then add in the Cajun seasoning.

    Add the kale and give it a good stir to combine everything together. Cook for 3-4 minutes before dividing between two bowls.

    Finish with the sliced avocado, lime and some spicy vegan mayo.
