Pre-heat the BBQ for 2-3 minutes. Meanwhile brush the steaks with oil and season with salt and pepper. Grill the meat for 2 minutes a side for medium – or cook to your liking and depending on the thickness of the steak. Remove from the heat and wrap i foil and let it rest for a while. In the meantime, make the warm tomato salsa.
Add the shallot, garlic and cherry tomatoes to the pan and gently fry for a few minutes, then add the spring onions, cook for a few more minutes until the tomatoes begin to soften. Add the balsamic vinegar and season with salt and pepper. Serve with your rested steaks immediately.
