Squash & Chilli Patties


  • Half a butternut squash, grated
  • 3 tsp chilli powder
  • 150g plain flour
  • 2 eggs, beaten
  • Handful of fresh chopped herbs (we used flat leaf parsley)
  • Salt & pepper
  • Oil
  • 0 : 10

    In a bowl add the squash, chilli, flour, salt and pepper. Then add the eggs and fresh herbs. Using clean hands, mix and combine everything together. Dust your hands with flour and form into 6-8 small patties (around 0.5cm thickness) and brush each side with rapeseed oil (or an oil with a high smoke point).

    Pre-heat the BBQ to a medium heat with the BBQ Grid in place and grill the patties for 5-6 minutes on each side, until crisp.
