Sirloin Steaks with Chimichurri


  • 2 sirloin steaks
  • 25g flat leaf parsley, chopped
  • 1 tbsp mint leaves, chopped
  • 1 tbsp oregano
  • 3 garlic cloves, minced
  • 2 tsp chilli flakes
  • 4 tbsp red wine vinegar
  • 6 tbsp olive oil
  • Pinch of sugar
  • Salt and pepper

    Pre-heat the BBQ with the BBQ Grid in place to a medium heat. Pat the steaks dry, then brush with a little oil and seasoning on each side. Place on the BBQ and cook for 2 minutes per side (for medium rare). Don’t lift or move the steaks while they cook on each side, this way you will get the perfect sear marks and crust.

    Remove from the heat and allow to rest, covered, for a couple of minutes while you make your Chimichurri sauce. Add your herbs to a clean bowl with the chilli flakes, red wine vinegar, sugar and garlic. Season with salt and pepper and finally add the oil, stir to combine.

    Slice your steaks into thin strips then spoon over the Chimichurri sauce before serving!
