Beat the eggs in a bowl and season well with salt and pepper. Divide the oil and butter equally between two Tapas Dishes and heat over a medium heat on the BBBQ Grid until the butter has melted and is foaming.
Divide the egg mix between the dishes and leave to cook for 30 seconds, then add your tomatoes and ham, or whatever fillings you want.
Leave to cook for a couple of minutes and then flip over. Cook for another minute or two or until the egg has set.
Slide on to your plate and enjoy!
