Pepperoni Pizza Gnocchi


  • 1 small red onion, peeled and finely diced
  • 1 red pepper, finely diced
  • 1 garlic clove, crushed
  • 300g chicken breasts, cut into small pieces
  • Half a red chilli, finely chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp tomato puree
  • 30g cream cheese
  • 150ml hot chicken stock
  • 500g bag gnocchi
  • 60g grated mozzarella cheese
  • 6-8 Pepperoni slices
  • Fresh basil (optional)

    Pre-heat the BBQ for 2-3 minutes and add a drizzle of oil to the Paella or Chef Pan.

    On a medium heat, add the onion, pepper and garlic and fry for 2-3 minutes, then add the chicken and chilli.

    Fry for 3-4 minutes then add the oregano, basil, tomato puree, cream cheese and the stock. Stir well to combine everything together.

    Cook on a low heat for a few minutes before adding the cooked gnocchi to the pan. Give everything a good stir, and season to taste.

    Sprinkle over the mozzarella cheese and pepperoni slices. Put the lid on the BBQ and cook for 4-5 minutes or until the cheese is melted and golden.

    Garnish with some fresh chopped basil (optional) and serve.
