Lamb Kofta Kebabs


  • 500g Lamb Mince
  • 1 tsp ground cumin
  • 2 tsp ground coriander
  • 2 garlic cloves, crushed
  • 1 tbsp chopped mint
  • ¼ red onion, finely diced
  • Pitta breads
  • 1 large tomato, sliced
  • Tzatziki to serve
  • Rapeseed oil

    In a bowl combine the lamb, cumin, garlic, chopped mint, onion and ground coriander. Mix well and season.

    Using damp hands divide into eight even balls, then roll each ball on a board to turn them into oval/kofta shapes.

    Thread onto the Cadac BBQ Skewers and brush with a little oil.

    Pre-heat the BBQ for 3-4 minutes on a medium heat then add the skewers. Cook for 4 minutes then turn and cook for another 4 minutes, don’t turn them until they are sealed, or the meat will stick to the grid. Once the lamb is cooked through remove from the heat.

    Meanwhile slice the tomatoes and season with a pinch of salt and a small drizzle of oil.

    Toast the pittas for a minute each side, then open and spread with a little tzatziki. Top with a couple of slices of tomato then 2 koftas.

    Garnish with fresh copped herbs or salad then serve.
