Start by melting your butter in a small pan or bowl. Take a sheet of filo pastry and brush one half with the melted butter, then fold the sheet over. Brush again with butter and fold in half again, then place into your Tapas Dish. Repeat this process twice more to make three pastry bases in the dishes.
Place the pizza stone on the cold BBQ and pre-heat for 5/6 minutes on a medium heat with the lid on. While the BBQ heats up whisk your eggs with a pinch of salt and pepper and the milk.
Pour into each dish equally then top with the grated cheese, tomatoes and spring onions. Brush the ‘crown’ pastry edges with more melted butter then place on the pizza stone. Cook with the lid on over a medium/low heat for around 15-20 minutes, until puffed up and the pastry edges are golden brown and crispy.
Delicious served hot or cold and with any fillings you like!
Tip: you could cook these on the BBQ Grid or alternative surface, keep the heat low to avoid burning the pastry bases.
