Pre-heat the BBQ over a medium heat for 2-3 minutes with the Chef Pan or a large flat pan in place.
Add 2 tablespoons of oil to the pan, once hot add the prawns and cook for a minute, then add the garlic, chilli and spring onions to the pan. Cook for another minute or so, until the prawns are pink. Add the sugar and fish sauce, give it a good mix and remove from the heat.
Garnish with the chopped coriander and a squeeze of lemon juice then serve.
