Goats Cheese Beef Burgers

Ingredients

  • 200g minced beef
  • 4 slices of smoked streaky bacon
  • 50g goats cheese
  • 1 small onion
  • 1 tomato
  • Lettuce, to serve
  • 2 tbsp mustard
  • 4 tbsp honey
  • 1 tbsp ketchup
  • 1 tbsp mayonnaise
  • Oil
  • Salt & pepper
  • 2 Brioche Burger Buns, sliced

    Peel the onion and finely dice half of it, keeping the other half for later. Mix the diced onion with the beef mince and season generously with salt and pepper, then cover and put in the refrigerator.

    Add the BBQ Grid to the BBQ and pre-heat for 2-3 minutes over a medium-high heat. Meanwhile cut the tomato into thin slices, and slice the goat cheeses in half. Mix together the mustard, honey, ketchup and mayonnaise and set aside. Once the BBQ is hot add the bacon and fry until it is crispy, then remove and drain on kitchen paper. Slice the rest of the onion into strips and fry in the remaining bacon fat on a low heat until they are soft and golden brown.

    Take the mince from the fridge and using wet hands form into two large, even burger patties. Press slightly in the middle so that the meat rises evenly when it is cooked. Fry the burgers over a medium heat on each side for about 3-4 minutes. Brush the burger buns with oil and place them on the barbecue rack until they are lightly browned. Once the burgers are cooked through add a slice of goats cheese on the burgers and let it melt.

    Remove the burgers from the barbecue. Spread both slices of your buns with the burger sauce. Add the lettuce, sliced tomato, burger and bacon to the bottom of the bun and finally add the caramelised onions.

    Serve straight away with napkins!
