Brunch Bagels with Avocado and Bacon

Ingredients

  • 4 bagels, sliced
  • 1 avocado
  • 1 lime, juiced
  • 4 cherry tomatoes, roughly chopped
  • 2 tsp maple syrup
  • 6 rashers streaky bacon
  • 2 eggs

    Pre-heat the BBQ for 2-3 minutes on a medium heat. Ideally use the Grill 2 Braai or BBQ 2 Plancha surface for this recipe.

    Mash the avocado with the lime juice, tomatoes and a little salt.

    Brush the bacon with the maple syrup and add to the ribbed side of the BBQ, cook for 6-7 minutes until crisp, the turn over and brush with the syrup again. Cook for a further 4-5 minute, until crispy. As the bacon is cooking add the bagel bases to the flat side, cut side down to the edges of the surface to toast, this should only take a minute or 2. Remove then spread with the guacamole.

    Add the bagel tops, cut side down, to the flat side and break an egg into each hole, cook for 10 minutes with the lid on or until the top of the egg is cooked to your liking.

    Load the bagel base with bacon and then the eggy top, finish with a grind of black pepper and enjoy.
